Spiced Lamb Roast with Figs and Honey


  • 3 cloves garlic, finely chopped

  • 4cm piece fresh ginger, grated

  • 2 fresh long red chillies, finely chopped

  • 1/3 cup finely chopped fresh coriander

  • 1/3 cup finely chopped fresh flat leaf parsley

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 1⁄4 cup olive oil

  • 2kg leg Prime Dorper Lamb

  • 9 medium fresh figs, halved

  • 2 tablespoons honey


Preheat oven to 180°C.

Combine garlic, ginger, chilli, herbs, spices and oil in a small bowl.

Rub herb mixture all over lamb and season. Place lamb in large oiled baking dish and roast, uncovered for 1 1⁄4 hours.

Add figs to dish, drizzle honey over figs and lamb. Roast about 15 minutes or until lamb is cooked as desired. Cover lamb and stand for 10 minutes before slicing.

Serve lamb with figs. You could also make double the herb rub mixture and toss it through steamed couscous and serve with lamb and figs.
