Dry Brine for Ribs


  • 2kgs Prime Dorper Lamb ribs

  • 3 teaspoons salt

  • 3 teaspoons mixed herbs

  • 3 teaspoons steak spice

  • 3 teaspoons crushed garlic

  • 4 teaspoons rosemary

  • 2 teaspoons crushed pepper

  • Juice 1 lemon

Mix all ingredients together, except ribs, then rub mixture over entire surface area. Place in a plastic bag and remove as much air as possible, tightly seal. Refrigerate for up to 2 days.

Rub mix into lamb twice a day. Remove lamb from plastic and dry with paper towel.

Cook however desired.
