Date & Tamarind Chutney


  • 2 cinnamon sticks

  • 5 cardamom pods, bruised

  • 2 teaspoons cloves

  • 3 1⁄2 cups seeded dried dates

  • 1 1⁄2 cups white vinegar

  • 1⁄2 cup firmly packed brown sugar

  • 2 teaspoons coarse cooking salt

  • 1⁄4 cup vegetable oil

  • 2 tablespoons tamarind concentrate

  • 2 teaspoons chilli powder


Place cinnamon, cardamom and cloves in centre of 20cm muslin square and tie tightly with kitchen string.

Combine muslin bag with remaining ingredients in large saucepan and bring to boil, stirring constantly then reduce heat.

Simmer, partially covered, stirring occasionally for 40 minutes or until dates are soft. Discard muslin bag before using.
