Spiced Rack of Lamb


  • Rack Prime Dorper Lamb

  • 5 tablespoons olive oil

  • 1⁄4 teaspoon cumin

  • 1⁄4 teaspoon turmeric

  • 1⁄4 teaspoon paprika

  • 1⁄4 teaspoon ground coriander

  • Juice of 1 lemon

  • Salt to taste


Combine all ingredients in a bowl.

Score surface of eight point Dorper lamb rack in a diamond pattern.

Rub lamb rack all over with the above mix, cover and allow to marinate in fridge for half a day if possible.

Roast in a 200°C oven for half an hour or until cooked to your liking.

Carve into two point racks at table and serve with a warm salad. Delicious!
