1 Prime Dorper Lamb lamb leg or shoulder, boned and butterflied 2 tablespoons ground cumin
2 teaspoons paprika
2 teaspoons ground turmeric
2 cinnamon sticks
Good pinch cayenne pepper
6 cloves garlic, finely chopped
Zested rind of 2 lemons
2 red chillies, deseeded and finely chopped
1 piece fresh green ginger, finely grated (about 3 tablespoons) Juice of 3 lemons
Salt and pepper
Gently heat half a cup of olive oil in frying pan and add cumin, paprika, ground turmeric, cinnamon sticks and cayenne pepper.
Stirring, add garlic, lemon rind, chilli and ginger and cook gently until aromatic. Be careful not to burn.
Add lemon juice and season with salt and pepper.
Rub all over lamb and let marinate for at least half an hour in fridge.
Place on hot barbeque or roast in 230oC oven until cooked.
Serve with a delicious roast vegetable salad,
great company, and a glass of your favourite red. Enjoy!
