2 tablespoons lemon juice
1 Olive oil
4 lamb chops
1 cup white wine
1/3 cup Dijon mustard
thyme (fresh is best)
6 cloves of minced garlic
Combine olive oil, lemon juice, thyme, pepper, salt, minced garlic in a bowl and mix well.
Arrange lamb chops in a large dish. Pour the marinade over the lamb chops and make sure they are completely covered then let sit at room temperature for 30 minutes.
Let the lamb chops sit at room temperature in this marinade for 30 minutes.
After 30 minutes, heat olive oil in a large skillet until hot. Add the lamb chops and cook on medium high heat for about four minutes of each side.
Remove the lamb and set aside.
Add wine, mustard, thyme and garlic to the skillet and bring to a boil for about five minutes to reduce the sauce.
Add the lamb chops to the skillet and heat for 10 minutes.
Serve with potatoes and greens.
